🍝 One-Pot High-Protein Veggie Pasta (Hot or Cold)
A lazy girl (or guy) dinner that still feels elevated.
If I only have 15 minutes and a couple pantry staples, this is my go-to. It’s one pot, plant-packed, high in fiber and protein thanks to the white beans, and it works hot or cold. AKA, cook it once, eat it twice, either fresh off the stove or straight from the fridge.
It’s light but filling. Comforting but fresh. And the best part? It’s budget-friendly and made with things you probably already have. No overthinking, just a little olive oil, garlic, and good seasoning goes a long way.
What You’ll Need:
– Pasta of choice
– Olive oil + garlic
– 1 can tomato sauce (any kind you like!)
– Cherry tomatoes (halved)
– 1 can white beans (rinsed)
– Handfuls of spinach
– Salt, pepper, oregano
✨ Cook your pasta. In the same pot, sauté garlic in olive oil, add cherry tomatoes, white beans, spinach, and pour in the canned tomato sauce. Stir everything together with the cooked pasta and season well.
It’s giving: high-protein, high-fiber, lazy girl (or guy ;)) brilliance.
Serve hot with a sprinkle of parm or enjoy cold straight from the fridge. Up to you!
